This system was first introduced by 'Donvier' of France and is sometimes referred to by their name. It uses a double walled metal cylinder filled with a gel which is first frozen solid in a freezer and then put into the base and then the ice cream mix is added. The pre-frozen cylinder provides the freezing. Originally for agitation one turned a knob on top. Now most units are electric, as is this one. A couple of tips. ALWAYS start the machine before adding the mix otherwise you risk the mixing blade freezing and the clear plastic housing cracking. Second, have everything as cold as possible. Prechill, to fridge temp all ingredients. Third, Once complete transfer your ice cream from the cylinder into a plastic tub(s).and let it set fully in your freezer.
